Our New Year's Resolution this year is to make at least one recipe per week from our "101 Things to Do With a...." cookbooks. So far, so good. All of the recipes thus far have been winners.

| Amy made our first couple of recipes. This one is from the Rotisserie Chicken book. It's "Chicken Tortilla Casserole." We didn't have any green enchilada sauce, so we use red. I took the picture before it was baked. After the picture, she added crushed Fritos and grated cheese on top. Our rating... "NAILED IT!" |

| This one is from the chocolate book. It's called "Brown Family Orange Sticks." NAILED IT! |

| The drawback to these recipes is that they make a lot. The plus side--they make a lot. Since is's just the two of us, we wind up eating it for three or four meals. This one is from the grits book. It's called "Old-fashioned Salmon and Grits." NAILED IT! |

| Pineapple Chicken came from the Casserole book. It tastes a lot like Hawaiian Haystacks in a casserole form. It was really good. NAILED IT! |
